Rebecca Choi
Executive Pastry Chef
Rebecca Choi is the Executive Pastry Chef at Manhatta. Originally from Long Island, New York, Rebecca was drawn to the art of pastry from an early age, leading her to complete the Pastry and Baking Arts Program at The Institute of Culinary Education in New York City.
In 2014, Rebecca began her career with an internship at Gotham, before joining the acclaimed Dominque Ansel Bakery as a pastry cook. From there, she moved to the award-winning restaurant Marea working alongside Pastry Chef Francis Joven, who quickly became a mentor. After nearly five years at Marea as a pastry cook, Rebecca held her first pastry chef position at Benno working with the celebrated Chef Jonathan Benno. There, she was introduced to Corporate Pastry Chef Salvatore Martone of The Bastion Collection. Following, Rebecca went on to hone her pastry skills at a variety of New York dining destinations including Le Jardinier where she reconnected with Pastry Chef Martone and worked as his junior pastry sous chef.
At Manhatta, Rebecca is passionate about celebrating flavors inspired by her Korean American heritage and her dining experiences across New York, blending traditional technique with unexpected flavor combinations.
